Dinner is Served

I made these for dinner last night. They are one of most favorite dishes. They are quick, easy, and yummy...I promise.

Grilled Chicken Kabobs: Bite size pieces of chicken, green pepper, red pepper, fresh pineapple. Thread onto wooden skewers. It helps to double up on the skewers and to soak them in water before hand. Next mix together 1/2 cup BBQ sauce with frozen OJ concentrate. The recipe calls for 3 tbs of OJ, but I always use lots more. Brush the sauce on, and grill!! You can make them ahead, keep them marinating in the frig. I use the rest of the sauce to brush on while grilling, it keeps them moist and juicy. I love the taste of the cooked pineapple and the sauce. Another tip: I always put a chunk of pineapple beside a chunk of chicken for flavor. Even if you don't like the cooked pineapple, it makes the chicken more flavorful.

the new house

I know if I am tired of talking about the new house, you must be tired of hearing about it. But here goes anyway. Emma told me the other day, "You're not supposed to love houses and things mommy. You're supposed to love people." I was so proud of her. She really gets it. Even through all the hype about the house, I have managed to teach her something.

The Jones Company has been really great to us, and I would use them again in a heartbeat. We are closing on our house on Friday, March 13th. (no, I'm not scared of Friday the 13th). That will be our first night at the house. We are planning on moving at least the beds on Friday and ((everything)) else on Saturday! So if you're free on the 14th, we could use some muscle. Mark is not allowing me to do anything...in my condition. :) Which will be really hard for my type A personality. I am posting a picture, the rest you can see when you come over.

Hi friends...

Wow, I knew it had been awhile since I posted, but Feb. 4th, comeON! So, I'm here now.
We have had quite the morning. It's consignment sale season!! One of my favorite seasons. So being the bargain junkey that I am, Emma, Maddox and I loaded into the van early this morning (yes, without showers or brushing our hair) to head over to a sale. All in all the kids were pretty good and I found a ((cute)) Strasburg jon-jon for Maddox.
Then, we went to Penney's to get this cookware that is majorly on sale and I wanted to be one of the first people there, b/c the last two times it was on sale, all the stores sold out. So here I go like herding cattle through the parking lot, through the store (no, don't touch that!, where did he go? what are you doing son?, come over here!, keep going!, get off the chairs!) to discover my item was on a very top shelf. So now we have to track down an employee who in return tracks down another employee to retrieve the item for us. He offers to carry the item to the front registers, where the 3 of us
s-l-o-w-l-y tag along behind him. Finally making it to the register, I pay and keep an eye on the kids over at the other register only to realize that I paid too much. That wasn't the sale price. So the cashier tells me we can get our difference.....in the back of the store! So here we go...again.
Very Long Story short...the item doesn't go on sale until 3pm! I have to return it, come back at 3:00 and buy it again. I can't wait. :) But in order to return and buy it back again, we had to find another employee to go get it from the front and bring it to the back. During which time, I am pretty sure Emma and Maddox made a wedding registry list.

Babies, Houses, and Leaders...

Big news y'all......we are having another baby! YEA! We just found out that we will be welcoming #3 in September. We are very happy, Emma is super excited, and Maddox doesn't have a clue.
I have always know at 6weeks the gender of my babies, I know this one is a girl. We are not going to find our technology wise, but I am expecting a girl. Funny, how I have always known that.
Anyway, our house should be done early March! The drywall is all finished, the trim and interior doors are in, and the cabinets are in! I love them. It's so exciting and I am soooo ready to move in there. We will have so much room to live and play (inside and outside). I will post pictures soon (maybe).
So I was so proud of Emma this month at ballet. We get to go into class one week a month to watch the girls dance. Emma was so focused and she knew all the moves. She did sooo good. I was very proud of her. Some of the other girls were not paying attention or didn't even know what to do, but MY girl was right on it! The teacher said Emma is the leader of the class, and all the other girls look to her to see what they should be doing! She was proud of herself too.

my big brother

This is my big brother. He's actually only 17 months older than me. Which made for some really BIG fights growing up. ((Everyone)) calls him P.J. except me and mom, we always just called him Prin. He plays guitar and sings really well. He loves hunting and fishing ((all the time)). Neway just wanted you to meet my big brother. Oh, and he's single y'all!!

family

This is my granny, Emma and Maddox's Great Grandmother. She is my mom's mother. She has lived in Albany , KY her whole life. She is 76 years old. (i think) She loves gardening, breaking beans, canning, and rainy days. She loves her great grandkids the most. She babysat in her home for as long as I can remember. A whole house full of kids. And They all called her Boo-Boo. All of them. Actually most everyone in Clinton County still calls her Boo-Boo.

She has RA, which was passed on by her mom, and which has also been passed on to my mom. What I remember most about her as a child is when we spent the night with her we had to go to bed before dark and wake up by 5:00am to get hot oatmeal and biscuits. She made the best oatmeal in 5 counties. Probably just instant, I don't really know, but my memories are so fond of it, I'm sure it was the best or I was just starving, b/c we hadn't eaten since 6pm. (when we went to bed.) I also will never forget the big plastic Santa Clause door cover she always put on her front door every year. I remember getting SO excited when I would see it for the first time each season. It gave my hope that maybe he is real, and maybe I will get something this year.

Now my kids love spending time with her. Kids were always drawn to her. She forever had some kind of nick-nack or what-not that she could whip out to amaze you with. I remember the babies she used to keep would play all day with washed out Cool Whip bowls and lids, and they loved it. Everytime we visit, even to this day, she searches her house for anything we might want or need, and she gives it to us. And now she has a cat, Penny Boots. Which my kids torment to death.

Just wanted everyone to meet her. Throughout the years she is the one that kept my family in church where we so desperatly needed to be. She is a Godly woman, and I am sure not a day goes by that she doesn't pray for everyone of her 3 girls, 6 grandchildren, and 4 great grandchildren.

Birthday Girl

Emma's party turned out really cute. I especially loved this cake. LOL I made it myself with my own two hands and it looks good from this picture but it wasn't all that great up close. Emma loved it. We had all the kids dress up like cats to go along with the Hello Kitty theme. We made ears with headbands and added bows to the girls and the bows wore bow ties. And I also painted some whiskers on their cute little faces! It was too fun. NE way she got this Barbie head that you can put makeup on and paint its nails. That was probably her fav. gift along with her little vanity. She really did get a lot of great things that she loves. All her friends came over minus Caitlin and all her cousins minus Dylan but he was out of town and I'm sure too old for a Hello Kitty party. (but that's o.k) Maddox was in a horrible mood most of the time, because he just woke up from his nap. He wanted me to hold him the whole time, but I didn't. So he cried. NEway what's a party with out a whinny, little brother?

Emma didn't care that he was whinny, she partied on! So thanks to everyone for coming and for all the gifts and cards. You are all very special to us!
